Matt Small: Chef

At Alba, Sous Chef Matt Small can't help but liken the experience to the jazz clubs he played in his hometown of Chicago. The creative energy of the kitchen not unlike an improv session where ideas compound and take shape in an ever changing, seasonal menu. Originally moving to Iowa to pursue a degree in music and education at the University of Northern Iowa, Matt found his passion for the culinary arts while working at the university's many dining halls and hasn't looked back. Chef Small moved to Des Moines in 2017 and began learning proper technique and dedication from Chefs Joe Tripp (Harbinger) and Mason Altheide (Alba). Besides cooking, Matt is an avid reader and collector of cookbooks, which he uses to combine classic French and American cuisine.

Emily Nelsen: MGMT

Emily loves the fast paced environment of the restaurant industry and comes to management after serving at our sister, Eatery A, since 2019. A Grimes, IA native, Emily has a Marketing Degree from Iowa State University, loves an Aperol Spritz, a mezcal or gin cocktail and excels in the Power 2 Hot Yoga at Powerlife. Needless to say we are lucky to have her focus and talent here at Bar Nico.

Austin: Bar MGMT

Austin owes his blue eyes to the sunny skies of beautiful South Dakota and still enjoys outdoor adventures as an Iowan with his wife and dog. He had moved to Oregon to pursue his culinary degree after high school and now enjoys service and bartending after working in kitchens for 10 years. Austin enjoys woodworking and crafting you elegant cocktails so come by and be impressed by his dedication and hip shirtsleeves.

Purveyor of delicious food, Jason owns Eatery A, Alba and Parlor in Des Moines. Native of Parkersburg, IA. Culinary graduate Northwest Culinary Institute in Portland, OR. Lover of New Orleans.
